What a delicious, refreshing, light dessert!! It is so easy to make sorbet at home. You will love it, your kids will love it....and the best part...it is three ingredients. It is so nice to have this in your freezer to reach for instead of ice cream. Yes, there is sugar....but other than that...just fruit!!! That's it....no dairy...no preservatives...nothing. Let's start here with MANGO......delicious MANGO!!! Then we will try lots of other flavors!!
MANGO SORBET
4 RIPENED MANGO 1 CUP SUGAR 1 CUP WATER 1/2 CUP PINEAPPLE JUICE
Start by peeling and dicing 2 of the Mango.
Get it all into a medium saucepan. Add the 1 cup of water and the 1 cup of sugar. Bring it to a simmer and leave it there for 25 minutes. It will reduce and get thicker. Now remove it from the heat and let it cool completely...about an hour.
Grab your blender and pour it in. Peel and roughly cut the other 2 Mango and get them into the blender.......as well as the pineapple juice. Blend until smooth
How easy was that???? Pour it all into a tupperware and allow to freeze for a good 12 hours. Looks beautiful already.
If you are making it with your beautiful friends...who also happen to be V.I.C.'s (Very Important Chef's) Karen & Lisa....scoop it into a beautiful margherita glass with some flaked coconut on top.
But, of course, we must take it to the next level!!! I found this amazing line of Balsamic Vinegars called SEVEN BARRELS not long ago. They had an enormous variety of flavors and seriously...one better that the next. But I happen to buy the Coconut Flavor....Oh My God!!! I could drink this stuff.... I use it on everything!! Karen had the awesome idea of drizzling it on top of the sorbet....AMAZING!! Sooo tropical and delicious. Thanks ladies!! ENJOY!!! ALL GOOD STUFF!!! Salad...shrimp and seafood, chicken, sandwiches........and now SORBET!!!
