This is just one of those rich, creamy, amazingly flavorful sauces that everyone should learn how to make. You can put this sauce on most any meat or pastas and turn it into an amazing meal in no time. AND......it is actually one of the easiest sauces to make!!! Seriously....10 minutes to a gourmet meal!!
MARSALA & SAGE CREAM SAUCE
2 SHALLOTS THINLY SLICED 1/2 STICK OF BUTTER (PLUS 1 TBLSP) 1 BOTTLE OF MARSALA WINE 1/3 CUP HEAVY CREAM 1O FRESH LEAVES OF SAGE THINLY SLICED SALT & PEPPER
****2 CUPS SLICED MUSHROOMS-----OPTIONAL
If you are using the mushroom like I did....you will want to wash and slice them. You can use a regular white, baby bella or whichever you prefer.... If you do not like mushrooms, just leave this part out.
In a large saute pan, melt the butter and add the shallots and mushroom. Saute until soft. Season with salt & pepper and add the thinly sliced sage leaves.
Add the bottle of Marsala Wine. Kick up the heat to a rolling boil and let it reduce by half.
When reduced....slowly add and whisk in the heavy cream. Here's a trick....if you like your sauce real thick.....add a small combination of corn starch and water mixture. But, start out slow, this will thicken it immediately.
Lastly, finish it off with 1 more tablespoon of butter.
That's it..... Now....today I have used it to dress up my Lamb Meatballs. It just takes any dish to the next level. Doesn't that look amazing!!! Try it....and let us know what you use it on.
