There are millions of different Frittata combinations you can choose from and they are all very good. This one is my absolute favorite. It is silly because it is sooo simple. I say "sometimes less is more" a lot, but particularly with zucchini. Zucchini is such a gentle, mild flavor that anything else you would put in here would over power it for sure. It is a veggie that you want to stand alone so you know it is there. That is why I love this... zucchini, onions and eggs. (a handful of grated cheese) that's all it takes. Simple and delicious!!
NANA'S FRITTATA
2 SMALL ZUCCHINI 1 MEDIUM ONION 6 EGGS 1/4 CUP PECORINO ROMANO GRATED CHEESE SALT & PEPPER 3 TBLSP OLIVE OIL
Prepare your zucchini. Peel it and dice it. Also, slice your onion.
Heat the oil in a medium sized non stick saute pan. Add the onion first. Give it a 5 minute head start because the zucchini cooks very quickly. When the onion looks like it is starting to soften.....go ahead and add the zucchini. Season all with salt & pepper. Let it all simmer about 15 minutes until cooked and zucchini is softened.
In the mean time you can prepare the eggs. Crack them all into a bowl. Add the grated cheese and whisk.
When zucchini and onions are cooked you can slowly pour the egg in covering all veggies.
Lower the flame and let it cook slowly for about 15 minutes. You can use a rubber spatula around the edges once in a while to make sure it is not sticking in any place. Shaking the pan also works. When almost cooked through and lightly brown on the bottom you are ready to flip!!! Place a plate on top of the pan....flip it over so the frittata is now on the plate. Slide the frittata back into the pan. It sounds harder than it is. Follow the pictures....(PS....do it over the sink....just in case!!!)
It's that easy!! Now continue cooking on the other side about 10 minutes more until cooked through and again lightly browned.

It goes great with any frittata. I also grilled some peaches and avocado to top it off. It was crazy good.....ENJOY!!!! ALL GOOD STUFF!!!!
