You see Oreos stuffed into everything lately. I needed to bake cupcakes today for the High School Football Team Pasta Party and thought... let's throw them in the cupcakes for an added treat when you bite into them, With a Cookies & Cream Frosting on top, the boys are gonna love them. Blue sprinkles for their school colors!! Let's give it a try!!
So, I always use my favorite recipe when I need a great chocolate cupcake. It is the one on the Hershey's Cocoa Powder container called....HERSHEY'S PERFECTLY CHOCOLATE CAKE. It is perfect!! It always comes out perfect...and so chocolatey!!! Grab yourself a container and let's start there...
OREO STUFFED CUPCAKES
FOR THE CUPCAKE (PERFECTLY CHOCOLATE CAKE)
2 CUPS SUGAR 1-3/4 CUPS ALL PURPOSE FLOUR 3/4 CUP HERSHEY'S COCOA POWDER 1-1/2 TSP BAKING POWDER 1-1/2 TSP BAKING SODA 1 TSP SALT 2 EGGS 1 CUP MILK 1/2 CUP VEGETABLE OIL 2 TSP VANILLA EXTRACT 1 CUP BOILING WATER 28 OREO'S
EXTRA OREO'S TO CRUSH FOR GARNISH MAKES 28 CUPCAKES
Preheat your oven to 350 degrees. Prepare your cupcake pans with paper liners.
In a large mixing bowl...stir together the flour, sugar, cocoa, baking powder, baking soda and salt.
Next you can add right in the eggs, milk, oil and vanilla and beat for 2 minutes on medium speed.
Add in the boiling water...yes the batter will be very thin but trust me...it will be perfect!!
Next, just put about 1 tablespoon of batter in the bottom of each cupcake.
Drop an Oreo in each!!!
Cover each with more batter about 2/3 of the way. Bake at 350 degrees for about 30 minutes or until a toothpick comes out clean. After about 10 minutes remove from the pan and let cool completely....YUMMMM!!!
While you are letting your cupcakes cook and cool completely...let's make our amazing Cookies & Cream Frosting!! HINT-----Make extra...you will want to dip everything in this frosting!! And again....sooo simple to make. Get your room temp butter into a large bowl. I am using my Kitchen Aid but you can absolutely use your hand mixer. Cream the butter. Add the vanilla and milk. Then slowly...in small portions add the powdered sugar until a nice thick consistency. If it gets too thick just add a drop more milk to smooth it out. Then lastly....the crushed oreo's. Now, I like a lot....but add as much or as little as you like.
OK....you are ready to frost. I got a little fancy today because of the Pasta Party, so I used a piping bag, but you can just spread it on any way you like!! Then top it with some more crushed Oreo's.....WOW!!!
Now cut one open and take a look at whats on the inside!!
Our very first Pasta Party was a success ....everyone loved them. I loved seeing all the boys enjoy them. What a dessert table the team had!! So many fantastic treats!! ENJOY!! ALL GOOD STUFF!!
