The distinct taste of truffles is unforgettable. If you have never tried them... you really should. For this dish, using truffle oil and not the actual truffles, gives you a nice mild flavor. This is a fantastic side dish. I love to serve this along side a great steak. You can find truffle oil in most specialty stores, just keep your eyes open and grab some when you find it. Truffle oil is very nice in pasta dishes too, so it's great to have some on hand.
PARMESAN TRUFFLE FRIES
4 BAKING POTATOES 1/2 CUP FRESH GRATED PARMESAN CHEESE TRUFFLE OIL SALT & PEPPER OIL FOR FRYING
Wash your potatoes very well because we will be leaving the skin on. Cut and slice your potatoes. Now, I like mine very thin but if you like a thick cut fry....go for it!! Make it however you like them.
Heat the oil in a large frying pan or dutch oven. The oil should be about half way full in the pan because you are basically deep frying them. Just be careful dropping the fries into the oil. Fry them until they are a golden brown about 10 minutes, turning to brown all sides.
Remove from heat and place on a paper towel for a minute to drain. Then remove towel and sprinkle with salt, pepper and grated parmesan cheese. Finally, the star of the show, drizzle the truffle oil on top. I will not tell you how much because it is all up to your taste. Toss all together and eat these amazing fries while still hot out of the pan.
