Try it on top of veggies...grilled meats...fish,,,or any pastas. Make it ahead and keep it in your refrigerator and you will be ready for a great meal anytime!!
PARSLEY & ARUGULA PESTO
2 CUPS FRESH FLAT LEAF PARSLEY 2 CUPS ARUGULA 1/2 CUP PISTACHIOS 1/2 CUP GRATED PECORINO ROMANO CHEESE 4 CLOVES OF GARLIC OLIVE OIL SALT & PEPPER
Start by rinsing your parsley and arugula and gathering all of your ingredients,
Pesto is really the simplest thing to make. All you do is put the ingredients into your food processor, except for the cheese. I like to give the nuts and garlic a chance to break down first since this is the base. Then add the cheese and stream in the olive oil as the processor is working. Just add the oil until it is at the consistency you prefer, usually about 1/2 cup, but it is totally up to you.
That is it!!!! Now the hardest part is to decide what you would like to put on???? Hummm......decisions, decisions. You can keep checking in my recipe box for new pesto ideas. I will keep adding!!! And please don't forget, as with any pesto, you can change ingredients any which way. You can change the nuts....If your not a fan of pistachios then you can absolutely use pecans. I have done that and it is fabulous. Use all arugula if you like or switch the parsley to basil....you get the idea.
