Fingerlings!!! What a great little potato to throw in the oven so quickly and easily and before you know it...you have an amazing side dish. You can do so many different flavor profiles with these. You can go the spicy route....mediterranean flavors...drizzle with a great balsamic...I could go on and on. And I will. Every time I make these with different flavors...I will write it down. Today, it is very simple but one of my favorites. So let's get going.
PARSLEY & CHEESE FINGERLINGS
A BUNCH OF FINGERLING POTATOES (AS MANY AS YOU WANT) OLIVE OIL SALT & PEPPER A BIG HANDFUL OF SHAVED PARMSAN CHEESE A BIG HANDFUL OF FRESH ROUGHLY CHOPPED PARSLEY
Start by washing your potatoes. Slice them in half lengthwise and lay them on a baking sheet. Preheat your oven to 400 degrees.
Season all well with salt & pepper. Drizzle generously with olive oil and mix them all with your hands to make sure all are coated evenly. Turn them all cut side down on the try.
Bake for one hour at 400 degrees. They should be beautifully browned but if you like them a little extra crunchy you can throw the oven on broil for the last 5 minutes. Just keep an eye and take them out when they are perfect for you.
As soon as they come out of the oven, sprinkle on all of the cheese and parsley while they are still hot so it melts into it all.
