I have been giving ideas for a great breakfast in bed for your favorite MOM!! or wife, of course!!! Let me just say....if you walked in with this in your hands....she will definitely get the message of how much you love her!!! No doubt... This is ridiculously good. If she is a peanut butter and banana fan... like me... definitely the right choice.
PEANUT BUTTER AND BANANA STUFFED FRENCH TOAST
8 SLICES WHITE BREAD 5 EGGS 1/3 CUP HEAVY CREAM OR HALF AND HALF 1 TSP VANILLA 4 OZ CREAM CHEESE ROOM TEMPERATURE 1/2 CUP PEANUT BUTTER 1/3 CUP POWDERED SUGAR 3 BANANAS SLICED BUTTER FOR GRIDDLE MAPLE SYRUP FOR SERVING
I have my little helper with me this morning. She loves to cook with Nana!! And her mom loves when I make breakfast. She is going to start by mixing the room temperature cream cheese with the peanut butter until combined. Then she will mix in the powdered sugar. Look at that face!!
In the meantime, you can whisk your eggs with the heavy cream or half and half and the vanilla.
Spread a generous amount of the peanut butter mixture on to each of four slices of bread. Top it with a layer of sliced bananas. Cover with the remaining slices of bread to make sandwiches.
Pinch the edges together so it all stays inside. Heat your griddle and melt about 1 Tblsp butter on it. Dip each sandwich in to the egg mixture and put right on the griddle over a medium flame. Give it about 3 minutes until golden brown. Then flip over and give the other side about 3 minutes more adding more butter if needed.
Top with a dollop of that peanut butter/cheese mixture, a few more bananas and some maple syrup!!! Just look at this..... INCREDIBLE....AMAZING.....DELICIOUS!!! ENJOY!!!
