Compote is a great idea for any fruit that you have in the house that is too ripe to eat and ready to turn into something else. Just like when you have too many ripe bananas, you should make banana bread. If you have strawberries, blueberries or raspberries.....you can make a compote. Pears make a fantastic compote!! I love combining different flavors with these fruits. Honey is a great pair for most fruits, but I really love it with pears. The flavors work so well together and you can use it in so many different ways. My favorite is on top of a bowl of plain vanilla ice cream. My daughter did a beautiful job of kicking it up a notch by using it on top of a Belgian waffle with vanilla ice cream. Try it on top of pancakes, waffles or crepes for breakfast. PEAR & HONEY COMPOTE
4 RIPENED PEARS 1/2 CUP WATER 1/4 CUP HONEY 1 1/2 TSP VANILLA 1 TSP CINNAMON
Peel and dice your ripened pears.
In a medium saucepan... add pears, water, honey, vanilla and cinnamon.
Bring it to a simmer and let it go til it's reduced by half.
Now all you have to do is decide how you want to eat it.....decisions, decisions!!! Just a hint.... make sure that you have some vanilla ice cream on hand!!! ENJOY!!!!
