A great appetizer for any party!! A great anytime snack or side dish for a week night dinner. Everyone loves a potato. Throw on some cheese, bacon and sour cream.......I'm pretty sure they will all love them.
POTATO SKINS
4 LARGE BAKING POTATOES 1/2 LB OF BACON CHOPPED SHREDDED CHEDDAR CHEESE BUNCH OF SCALLIONS SOUR CREAM OLIVE OIL SALT & PEPPER
Heat your oven to 375 degrees. Line a cookie sheet with foil. Grab your potatoes and wash them well. Drizzle with olive oil and season generously with salt and pepper. Bake for 1 hour or until fork tender.
Cut in half lengthwise. With a spoon, scoop out the flesh of the potato leaving a thin layer above the skin.
Gather the rest of your ingredients and layer on the potatoes. First the cheese, then the bacon and finally the scallions.
Put them under the broiler on low setting for the first 1 minutes so the cheese does not burn. You can kick it up to the high setting for the last minute or two so it gets crispy. But keep an eye on it. It will brown quickly.
Slice each half into three. Plate and serve with sour cream finished with some extra scallions.
