A super healthy, nutritious and delicious meal!! This is a protein packed dish. I like to make this in bulk on a Sunday along with a ton of grilled chicken. Throw some of this in a bowl with some grilled chicken cut up and tossed in.......an amazing lunch!!!!
QUINOA WITH BRUSSEL SPROUTS AND SPINACH
1 CUP OF QUINOA PREPARED AS DIRECTED ON PACKAGE BRUSSELS SPROUTS SPINACH WHOLE HEAD OF GARLIC HANDFUL OF GRATED CHEESE 3 TBLSP OLIVE OIL SALT & PEPPER
Start by preparing your quinoa as directed on the package. Next prepare your ingredients. Wash, clean and cut your brussel sprouts. I like to almost shred them. Chop your spinach and slice your garlic using that famous Pampered Chef Garlic Slicer.
Heat the oil in a large saute pan. Add the brussel sprouts. Toss to lightly coat in the oil. Add a little extra oil if needed. Saute over a medium heat for about 15 minutes until they begin to get soft. Season with salt & pepper. Add the garlic and continue cooking for another 10 minutes until all are soft. When done, remove from heat and add the spinach on top. Toss together. The spinach will wilt almost immediately in the pan.
Add the quinoa and a handful of cheese and mix together.
