Meat, potatoes, vegetables....all in one dish!! What else could you ask for in a great Shepherd's Pie?? Now, the nice part is, you can substitute any veggies you like. Peas also works great in this. It is one of those all in one dishes that is definitely fit for when you need some comfort food. When you need to curl up on the couch with a bowl and a fork....this is the perfect dish!!
SHEPHERD'S PIE
2 LBS GROUND BEEF 1 LARGE BAG FROZEN CORN THAWED 1 LARGE ONION DICED 5 CLOVES OF GARLIC CHOPPED 2 CUPS OF DICED CARROTS 4 TBLSP BUTTER 3 TBLSP OLIVE OIL 1/3 CUP SOY SAUCE 1 TBLSP GARLIC POWDER SALT & PEPPER
FOR THE MASHED POTATOES
6 TO 8 RED POTATOES 4 TBLSP BUTTER 1/3 CUP MILK SALT & PEPPER
Start by preparing your potatoes. Peel and cut into pieces and get into a pot of boiling water. Boil until soft. Prepare your mashed potatoes as you like. I like to add a few tablespoons of butter, some salt and some milk. I use a hand mixer until smooth and creamy.
In a large saute pan...melt your butter and oil. Add the diced carrots and onions and garlic. Season with salt & pepper. Saute about 15 minutes until all is fork tender.
Add your ground beef and brown slowly.....as it is browning, go ahead and add the soy sauce and garlic powder.
Once completely cook through.....drain the fat and put all in a large baking dish like I have.....flatten down with the back side of a spoon.
Now, layer with the frozen, but thawed corn!!!!
Lastly.....spread the mashed potatoes on top to completely cover. Bake at 350 degrees for about 30 minutes or until the top is slightly golden brown.
WOW!!!! Let it cool a few minutes and dig in!!!!!
