SMOKER FUN!!! Another fun day with the smoker. So today...I am doing wings because wings are my sons favorite!!!! I have done these wings in the oven before using this exact dry rub....SWEET HEAT DRY RUB!! But today, I am going to get them into the smoker. They will be that fall off the bone...slow cooked all day wing.....with that great smoky flavor of the applewood chips as well as being sprayed every hour with apple juice.......OMG!!!! Let's do this!!
SMOKED WINGS
2 PACKAGES WHOLE WINGS APPLE JUICE ***PREPARED SWEET HEAT DRY RUB
SWEET HEAT DRY RUB
1 CUP BROWN SUGAR 2 TSP KOSHER SALT 1 - 1/2 TSP BLACK PEPPER 2 TBLSP GARLIC POWDER 2 TBLSP ONION POWDER 2 TBLSP CHILI POWDER 1 TBLSP SMOKED PAPRIKA 2 TSP SAGE 1 TSP CUMIN
Grab a huge bowl and get all your wings into it. Completely toss and cover the wings in your prepared Sweet Heat Dry Rub mixture. Let it sit on the counter so the wings will come to room temperature. You do not want to put cold meat into the smoker. It will bring the temperature down inside immediately. So give it plenty of time. Right before I am ready to get them into the smoker I like to get more dry rub into the bowl and toss them around again, It will give them a second layer of this amazing flavor. The first layer may begin to soften or almost melt a bit so the second layer seals the deal!!!
You should follow the directions for use for your individual smokers. I used Applewood Chips soaked in apple juice for two hours before I started to heat my smoker. You want the temperature to be about 180 degrees before putting them in but then just lay them on the racks. In my pictures, you will see, that I also threw in some incredible sausages that I got at Fresh Market in Montvale, NJ. They have a great variety there....and while we are smoking.....why not??? Smoked sausage....I'm in!!!
Ok...so smoking can not be easier. Let it go....keeping the temperature consistently about 180 to 200 degrees. After the first hour...open the door and using a spray bottle filled with apple juice...give it all a good spray. This just keeps it all nice and moist and the sugars in the juice will give it a great carmelization as it cooks. Do this every hour. These wings will take about 4 hours in total to be fall off the bone ready!!! Seriously tho, sooo easy and the flavor on these wings from the smoking....crazy!! If you like meat.....buy a smoker!!!
