Spaghetti....proscuitto....cheese, what could be wrong with that???? Not a thing!! A traditional Easter dish in our family but so delicious there is no reason we shouldn't make this all year. It is a great brunch item for Mothers Day or any time. Also a great party appetizer. Instead of cutting in pie slices, just cut in squares to plate. So simple to make. Give it a try anytime.
SPAGHETTI PIE
1 LB SPAGHETTI 5 EGGS 1/2 GRATED CHEESE (I PREFER PECORINO RAMANO) 5 SLICES PROSCUITTO 1 6OZ BLOCK OF FONTINA CHEESE FRESHLY GRATED SALT & PEPPER 1 TBLSP OLIVE OIL
Preheat your oven to 350 degrees. Bring a large stock pot filled with water to boil. Don't forget to salt your water. Add spaghetti and cook as directed on package but leaving it al dente!! Drain in strainer and drizzle the olive oil over and mix. This will allow it to cool and not get all stuck together. Allow to cool completely.
Now you can prepare you egg mixture. Grab a large bowl and add the 5 eggs, cheese and salt & pepper. Whisk it up well. When your spaghetti is cooled you can add it all right into you egg mixture and mix well.
Grab your favorite pie plate and layer half of the spaghetti on the bottom. This one is my favorite because as you eat the pie, it reveals beautiful words, and my mom gave it to me!!
Now layer the proscuitto evenly.
Next grate your cheese and layer that on top.
Finally, pile on the last half of the spaghetti. Bake at 350 degrees for 40 minutes. The top pieces will just be starting to get crunchy....my favorite part!!
It is a beautiful, delicious dish whole and when cut into slices.
