Believe me... this tastes as good as it looks or maybe even better!! It is definitely a luscious, indulgent treat. Perfect for that special mom on mothers day, a beautiful birthday breakfast or when your just feeling like an over the top french toast!! Which is the way my daughter Melissa and I work. This is a perfect example:
We have been trying to exercise together lately but this one morning she showed up wearing this shirt!! That was the end of the exercise for the day... I knew she needed something crazy for breakfast. So we kicked off our sneakers and made this!!! But really... how adorable does she look in that shirt??
STRAWBERRY BANANAS AND CHEESE STUFFED FRENCH TOAST
8 SLICES OF WHITE BREAD 5 LARGE EGGS 1/3 CUP HEAVY CREAM OR HALF AND HALF 1 TSP VANILLA 1 CUP SLICED STRAWBERRIES 2 BANANAS SLICED 4 OZ CREAM CHEESE ROOM TEMP 4 OZ MARSCAPONE CHEESE ROOM TEMP 1/3 CUP POWDERED SUGAR BUTTER FOR GRIDDLE MAPLE SYRUP FOR SERVING
Grab a small bowl and mix together the cream cheese and marscapone cheese. Add in the powdered sugar. Mix until smooth. Meanwhile, in another bowl whisk the eggs, heavy cream and vanilla.
I happen to have lots of little helpers today....notice all the tiny hands!!
Spread 4 slices of bread generously with the cream cheese mixture. Layer each with strawberries and then bananas.
Now, just top them with another slice of bread. The trick here is to squish the bread together and especially to pinch the edges together so everything stays inside.
Heat a griddle over a medium flame. Melt about 1 Tblsp of the butter on the griddle. Dip one of the sandwiches in the egg mixture and place right on the griddle. Do this with the rest of the sandwiches. Let it cook about 4 minutes or until golden brown then flip over and give the other side about 4 minutes also. Add more butter to the griddle if needed when you flip them.
Put a dollop of the cheese mixture on top of each piece and sprinkle with powdered sugar. It looks delicious just like this.......
Now get ready for crazy......over the top!! Go ahead.....cut it open!! Then pour some great maple syrup on top. This is what you will be looking at......
Now that's a Melissa style breakfast....she was one happy girl today!!! I think my little babies were happy also....just look at their plates!! Treat yourself....ENJOY!!!
