. CUPCAKES!!! Who doesn't love a great cupcake??? My family goes crazy for cupcakes. I have done many dessert tables for all sorts of different occasions with all different varieties of cupcakes. I am going to start a new section in our recipe box titled "Dessert Tables". That way you can get all kinds of ideas for your own. I love to put together crazy over the top tables of cupcakes...dessert shots...cookie balls...candies, etc!! Keep checking back for this collection to begin and to see pictures of the desert tables I have created in the past.
Anyway, back to this Stuffed Chocolate Chip Cookie Dough Cupcake!! This was created for my son CJ!! He loves when I stuff them...with any kind of filling really. But Cookie Dough.......he is haaappppyyyy!!! He went crazy for these. Most of his friends did too!! They were a great big hit, so delicious, you have to try them.
I suggest you make the cookie dough stuffing first, so you can put them in the refrigerator to chill while you are making the cupcakes. So let's start there....
This recipe will make 24 regular cupcakes or 12 jumbo cupcakes. DOUBLE THE RECIPE AND TRY MY COOKIE DOUGH BALLS THAT ARE COMING OUT TOMORROW!
CHOCOLATE CHIP COOKIE DOUGH STUFFING
5 TBLSP BUTTER SOFTENED 1/2 CUP LIGHT BROWN SUGAR 1 CUP FLOUR 8 OZ SWEETENED CONDENSED MILK 1 TSP VANILLA 1/3 CUP GHIRARDELLI CHOCOLATE CHIPS 10 CHIPS AHOY COOKIES CRUSHED
In the bowl of your stand up mixer, or using your hand mixer, cream together the butter and the brown sugar. Slowly add the condensed milk and flour in small additions of each. Then the vanilla....and the chips!! Crush the chocolate chip cookies in a zip lock bag. Mix all together. Put it all into a bowl and into the refrigerator to chill
CHOCOLATE CHIP CUPCAKES
2 STICKS OF BUTTER SOFTENED 1 CUP SUGAR 1 CUP BROWN SUGAR 1 TBLSP VANILLA 1 CUP MILK 4 LARGE EGGS 3 CUPS FLOUR 1 TBLSP BAKING POWDER 1/2 TSP SALT
Preheat your oven to 350 degrees.
Cream the butter and both the sugars together. Add the eggs one at a time. Next, add the vanilla. Sift together the flour, baking powder & salt. Then in small additions add the milk and the flour. Fill your lined cupcake tins 1/3 of the way up. Bake at 350 degrees for 18 to 20 minutes or until a toothpick comes out clean.
FOR THE FROSTING
3 STICKS SOFTENED BUTTER 3/4 CUP BROWN SUGAR 3 CUPS POWDERED SUGAR 1/2 TSP SALT 1 TSP VANILLA 1 TBLSP MILK
Cream the butter and the sugar. Add the salt, vanilla and milk. Then powdered sugar in small additions until a nice firm consistency. You may need to add a little more or less sugar. You can also refrigerate this for a bit to get a bit firmer.
While the frosting is chilling in the refrigerator you can stuff your cupcakes. Cut a small circle into each cupcake and pull out the middle. Grab your stuffing and fill each cupcake with as much or little as you want......
Grab your frosting. You can just frost it with a knife or get a bit fancier like I did and use a pastry bag and tip. You are almost there....hang in there!!! It's sooo worth it!!
Last, you can crush a few more Chips Ahoy cookies and sprinkle on top of the cupcakes!! OK.....do these look amazing or what????
