This is a great light summer salad. The citrus ginger serves as a marinade for the shrimp as well as a dressing for the salad so the flavors all compliment each other. It is packed with great nutrition from those super healthy ingredients like the kale, carrots and cabbage. Which also make it beautiful and colorful!! And the shrimp....with all the flavors of the marinade....let's just say....make a lot!!! You may want it for lunch tomorrow, also.
SUPER SALAD WITH CITRUS GINGER SHRIMP
FOR THE SALAD
BUNCH OF KALE 1 SMALL HEAD OF GREEN CABBAGE 1 SMALL HEAD OF RED CABBAGE 1 CUP OF SHREDDED CARROTS 1/2 CUP CRANBERRIES 1/2 CUP PEPPITAS
First, you will want to prepare the marinade/dressing. Juice the 2 grapefruits and the 2 oranges. Grate the fresh ginger and add it in. Then add in the vinegar, honey.
Clean and put the shrimp in a bowl. Add a handful of fresh chopped cilantro and the salt & pepper. Pour in the citrus ginger marinade just to cover the shrimp. Refrigerate for an hour or two.
While the shrimp is marinating you can throw together the salad. Chop the kale, shred the green and red cabbages.
Top it with the shredded carrots, cranberries and peppitas.....yyuuummmm!!!!

Use the citrus ginger dressing on the salad before serving. It is best to toss it in the dressing and let it sit while you are grilling the shrimp so the flavors all come together. Now, there is nothing left to say except......dig in!!!! ENJOY!!!!
