This is a delicious recipe that a very good friend "Sue", gave me about 27 years ago....yes we are old!!! We were neighbors, great friends and both had babies a few weeks apart. So her mother-in-law, gave us this recipe because it was so quick and easy to prepare and all kids love this chicken because it is sweet!! Yes....all kids love it. And yes......I still make it, Sue!!! Love and miss you!!!
SWEET & SOUR CHICKEN
CHICKEN TENDERS EGGS FLOUR OIL FOR FRYING
FOR THE SAUCE
DUCK SAUCE ( 40 OZ JAR -I ONLY USE HALF BUT LIKE TO HAVE EXTRA!!) SAUCY SUSAN (19 OZ JAR) 1 CAN CRUSHED PINEAPPLE (20 OZ CAN) 1 CAN PINEAPPLE CHUNKS (20 OZ CAN)
Basically you all know the drill to start.... Cut your chicken into bite size pieces. You can absolutely use boneless chicken breasts, I just prefer to use the chicken tenders. Whichever you want is perfect.... Heat you oil in a large saute pan!!!
Next, get your eggs whisked in a bowl and the flour in another bowl. Coat the chicken in the flour first.....then dip in the egg....then into the hot oil and fry until golden brown and cooked all the way through flipping half way. I am using only flour and egg because I want to keep it a light, thin coating!!
Beautiful....Now for the sauce. In a large stock pot add the whole jar of Saucy Susan, approximately half the jar of the duck sauce and both cans of pineapple. I like to use both...you get some chunks and some bits and pieces......best of both worlds I guess. But you can choose whichever you like.
Now just heat it all together over a low flame. I like to add the chicken after it is heated through at the end. Mix it all together. Make yourself some rice to serve it over. It is a quick and easy meal....especially if you do your chicken ahead when you have time...like on a Sunday (Meal Prep Day in my house) then you just through the sauce together and warm it all up on a week night.
