Tonight, I am technically making Tortellini Alfredo, but it has been given a new name in our home. It is now referred to as..."Tortellini A LA Tracy" !!! My BFF Tracy is the type of person who orders the same thing, no matter where you go. If there is Tortellini Alfredo on the menu, she is definitely ordering it. It makes me crazy that she doesn't try different things. The only thing I can ever hope for is that it is made with some peas or pancetta (at least some grilled chicken or shrimp on top.) But yet, I bet she has never made this dish for herself. Not that she needs to eat it at home also, but hey.....why not!!! Haha....here you go Tracy. So simple and of course.....delicious!! And if you are really feeling the challenge, look at my recipe for your own fresh ricotta to use in this dish. If you do, add a little on top at the end when you serve. Amazing....just saying...
TORTELLINI A LA TRACY
2 CUPS HEAVY CREAM 1/2 STICK OF BUTTER 1 CUP OF FRESH RICOTTA CHEESE 1/4 CUP GRATED PECORINO ROMANO CHEESE 1 TSP LEMON ZEST PEPPER FRESH PARSLEY FOR SERVING
TORTELLINI PREPARED AS DIRECTED FOR SERVING.
Place butter and heavy cream in a medium sauce pan. Cook over a low flame just until butter is melted and cream is warmed. Do not allow to boil.
Add the ricotta cheese and continue to cook just until all is combined and again warmed.
Add lemon zest, grated cheese and pepper. Continue to cook just for five minutes. The ricotta cheese in here will give you a thicker sauce and the lemon zest will give you a brighter, not so heavy, flavor.
