Everyone needs to no how to make a good pesto. Again, one of those fun things that you can mix up. Today, I am showing your your basic Basil Pesto, but after that we will do a Parsley & Arugula Pesto..... Sundried Tomato Pesto... and I'm sure we will make up some more as we go!! You really just need to pick some base ingredients like your herbs and your nuts and go from there.
The best part of a pesto is that it adds soooo much flavor to any dish. It is a great, healthy way to take chicken, fish or veggies to a whole new level of flavor and deliciousness. Of course, if your not watching your calories...it pretty great on pastas also!! Today, I just boiled some tortellini, but when you throw some pesto and grated cheese on top.......now that's dinner!!
BASIL PESTO
5 PACKED CUPS OF BASIL 1 CUP OF GRATED PECORINO ROMANO CHEESE 3/4 CUP PINE NUTS 3 CLOVES OF GARLIC OLIVE OIL 1 TSP PEPPER First....wash your basil and gather your ingredients.
Start by packing the basil into your food processor. You may need to put half in and pulse it a few times to break it down to be able to fit the rest.
Next, add in the pine nuts, garlic, grated cheese, pepper and about 1/3 cup of olive oil. Let it pulse until coarsely chopped.
With the processor running stream in more olive oil (approx another 1/3 cup) until a nice smooth consistency. You can judge how thin or thick you like you pesto as you add the oil in. Again, it's all up to you!!
As, I said....today all I had was some of this prepared pesto in the frig. So I pulled out a bag of tortellini and......well just look at this.....who wouldn't want this for dinner???? ENJOY!!!
