Quinoa....there are so many things to do with quinoa. Hot dishes, cold salads, you can add it to soups or substitute it for rice in just about anything. Today ... Quinoa with Sauteed Veggies. I love to make this in bulk for the week. It is a great lunch or dinner, especially if you add some grilled chicken, salmon, or shrimp. It amazing just by itself because it is very filling. I am like to serve it with broiled lamb chops....yum!! My family loves lamb and especially those little baby chops. When I find them reasonably priced at Costco, I stock up!!
QUINOA WITH VEGGIES
3 TBLSP OLIVE OIL 8 CLOVES GARLIC 1 RED PEPPER 1 YELLOW PEPPER 1 MEDIUM ONION 1 BUNDLE OF ASPARAGUS 2 CUPS OF QUINOA SALT & PEPPER HANDFUL OF PARMESAN CHEESE
Start by bringing 4 cups of water to boil. When it comes to a boil add the quinoa and lower the heat to a low simmer. Cook covered and stir occasionally for about 20 minutes until all water is gone and cooked through. Leave the cover off at this point to let it dry out a bit. It will look light and fluffy when done.
While you are making your quinoa, you can get started on chopping the peppers and the onion. Heat the oil in a large saute pan and add the veggies.
Give them about 10 minutes to start cooking through. Then add the sliced garlic, cut asparagus and salt & pepper to season.
Saute for about 15 minutes more or until all veggies are tender throughout. Next, add your cooked quinoa to the saute pan and mix together with the veggies. Add a handful of parmesan cheese to the top and there you go. A healthy and beautiful dish. Enjoy!!!
