Here is a suggestion of a great pairing for that Parsley & Arugula Pesto we made. You can find the recipe in my recipe box. Spaghetti Squash is so simple & delicious. It is great just roasted but if you want to kick it up a notch.......and maybe you have some of this pesto in your frig already made.....throw a spoonful on top and it will turn you side dish into a meal!! You will not be able to stop eating it.
Soooooo simple!!!! Just cut your Spaghetti Squash in half and scrape out the middle. Place all on a foil lined baking sheet.
Now rub each completely with olive oil. Season with salt & pepper......and my favorite...the nutmeg!!
Just flip them over on the baking tray and bake at 400 degrees for about 45 minutes to an hour or until fork tender.
Gorgeous!!! You want to let them stay in the oven until that beautiful carmelization is there. It gives it great color but more importantly amazing flavor!!
When it is cool enough to handle....just use a fork to scrape out the spaghetti!!
Drop a couple spoonfuls of that amazing pesto on top. You will not need much for this. Spaghetti squash, is such a delicate, light vegetable you wouldn't want to over power it. And there is a huge amount of flavor in the pesto so start with a spoon and use it according to your taste. ENJOY!!!!
