My family loves Buffalo Chicken anything!!! Wings, dip, wraps, Buffalo Chicken meatballs, fried bites...it goes on and on. So I am constantly trying to come up with new ideas for Buffalo Chicken. Here is my latest...Buffalo Chicken Salad!! A simple chicken salad with all the goodness of the Buffalo flavors. Great as an appetizer served on little crostinis...lunch in a wrap...or on lettuce boats like I did today!! Anyway you like it....it's all up to you!!
CHICKEN SALAD BUFFALO STYLE
3 SPLIT CHICKEN BREASTS OLIVE OIL SALT & PEPPER 1/2 CUP BUFFALO WING SAUCE 1/2 CUP RANCH DRESSING 1 CUP MAYONNAISE 1 CUP DICED CELERY BLUE CHEESE CRUMBLES *****EXTRA SAUCES FOR TOPPINGS**** ROMAINE LETTUCE
Preheat your oven to 350 degrees.
Season the chicken with salt & pepper and drizzle with olive oil. Bake for about 1 hour 15 minutes or until chicken is cooked completely through.
When cooled....cut it off the bone and shred or dice the chicken.
Get it all into a bowl and add the chopped celery. Of course...if you like anything else like onions or carrots....go ahead and add them in also. In a smaller bowl, mix together the mayo, ranch dressing and buffalo wing sauce. I love Sweet Baby Rays but use whatever brand you like.
Now just pour it in and mix it all up!!!
Fantastic...so easy if you have left over chicken and don't know what to do with it. You can turn it into this in minutes. Again, I made ours in beautiful lettuce boats today since we were trying to keep it light. Go ahead and top it with those Blue Cheese crumbles and some extra sauces if you like.
