76Just look at this Burger!!! If you like Lamb...you will love this Burger!! My entire family loves loves loves lamb.....any kind of lamb. So I do make lamb alot. Burgers, Lamb Chops and of course my Lamb Stew. But this burger is sick!!! Soooo good when topped with my Pickled Red Onions and Cucumber Tzatziki Sauce. Basically a Gyro in a burger. I have also paired it with my Honey Lime Corn today...what a beautiful dish. It's truly like eating out.....right at home. Except no one left me a tip!! I'll have to work on that.
OK ...so here's the crazy part. I know from my pictures you all think I'm nuts but it is just something I like to do. And soooo easy and makes such a difference. So, I want to share it with all of you. I like to grind my own meat.....Now listen to me!! First of all, when you buy ground meat in a supermarket, you do not actually know what is all ground up in there...think about it!! So, it is usually a cleaner meat when you are grinding your own and normally cheaper when you get a good sale. I also would not do it if it was not soooo easy to do with the attachment I purchased for my Kitchen Aid Stand Up Mixer. It really is a piece of cake!!! I can buy a huge leg of lamb from Costco or chicken breasts on Tuesdays from Fresh Markets Chicken Sale....take it all home...grind it all up...and freeze it in portions.
OK....but if you still think I am crazy....and you will never do that...Here is another trick. Instead of buying Ground Lamb at your local store, buy a whole Boneless Leg of Lamb. Then just ask the butcher to grind it up. They will absolutely do that if you just ask. You can ask them to grind your chicken or sirloin also. A good burger or meatball always starts with a good meat.
So here, in these pictures, I have a whole boneless leg of lamb that I cubed and just ran through the Grinder on the Kitchen Aid Mixer using the attachment.
It really is easy and a delicious great meat to work with.
Now just add all of the ingredients into the bowl in any order and mix well with your hands.
Now just form into patties. I made 5 burgers out of this so they are pretty much a little less than a half pound each. But they will also shrink as they cook so they are a perfect size.
Now just get your grilling on. Make sure it is preheated and the grills are brushed with an oil so they do not stick......but I am sure you all knew that!! Grill about 8 minutes on each side...I like mine well done so I may let it go a bit more but make them as you like!!
Again, I have topped these burgers with my Pickled Red Onions and Cucumber Tzatziki Sauce, as well as some Arugula!!! I hope you do the same to get the full flavors all together. It is amazing!! You can go to my recipe box to find them as well as the Honey Lime Corn I made for a side. Seriously.....look at this!!! I definitely deserve a tip!!!
