So yes, it is Monday. Pretty much every Monday, I wake up and say the same thing. Time to start that diet!! So on Monday, I like to do some preparing for the week. I love to make these protein snacks that I have created under the demands of my daughter, Chelsea. She insisted one day that I figure out some healthy treats/snacks since she was spending so much money ordering all of these protein cookies, muffins and different types of bars on line. So, I gave it a shot and they are actually pretty good. Now I am hooked on making these for me. If she gets here on a Monday... maybe I'll share. Just another way to get a visit out of my baby!!! I have made the muffins and different cookies but these seem to be my favorite. So take a look at my recipe for Protein Balls. These are a frozen treat and a great substitute for ice cream at night. I am also going to make a big pot of quinoa with veggies. This is great to make in bulk and you have it all week for a quick hot lunch or dinner on the run. you can grill up some chicken and make it a meal. So great to have on hand.
